Ingredients
- 2 ½ c flour
- 1 t baking powder
- 1 t salt
- 1 stick of butter, softened
- 2 c sugar
- 2 eggs
- 15 oz. whole milk ricotta cheese
- 3 T lemon juice
- 1 lemon, zested
Directions
- Mix flour, baking powder & salt.
- In a separate bowl, combine butter & sugar, beat 3 minutes until light & fluffy.
- Add eggs, one at a time.
- Add ricotta cheese, lemon juice & lemon zest.
- Add dry ingredients.
- Spoon dough onto parchment paper lined cookie sheet, about 2 T.
- Bake at 375 about 15 minutes, until slightly golden at the edges.
- Let cool 20 minutes.
Glaze
Ingredients
- 1 ½ c powdered sugar
- 3 T lemon juice
- 1 lemon zested
Directions
- Combine powdered sugar, lemon juice & zest, stir until smooth.
- Spoon 1/2 t onto each cookie.
- Let glaze harden, about 2 hours.
