Lemon Ricotta Cookies with Lemon Glaze

Ingredients

  • 2 ½ c flour
  • 1 t baking powder
  • 1 t salt
  • 1 stick of butter, softened
  • 2 c sugar
  • 2 eggs
  • 15 oz. whole milk ricotta cheese
  • 3 T lemon juice
  • 1 lemon, zested

Directions

  • Mix flour, baking powder & salt.
  • In a separate bowl, combine butter & sugar, beat 3 minutes until light & fluffy.
  • Add eggs, one at a time.
  • Add ricotta cheese, lemon juice & lemon zest.
  • Add dry ingredients.
  • Spoon dough onto parchment paper lined cookie sheet, about 2 T.
  • Bake at 375 about 15 minutes, until slightly golden at the edges.
  • Let cool 20 minutes.

Glaze

Ingredients

  • 1 ½ c powdered sugar
  • 3 T lemon juice
  • 1 lemon zested

Directions

  • Combine powdered sugar, lemon juice & zest, stir until smooth.
  • Spoon 1/2 t onto each cookie.
  • Let glaze harden, about 2 hours.
